Review: Beautifully illustrated and laid out book, plenty of interesting recipies and nutritional information. Really looking forward to trying some of these recipes.

Review: The first half of the book is mainly general, easily available facts, peppered with pseudoscience and straight up misinformation. Saying something was shown in "a study" is not a citation, and in the cases where the science is a little stronger she tends to give a bit more information about her sources. It's very misleading if you haven't done a lot of background reading yourself, as every claim she makes is stated as fact, and the only way to differentiate the nonsense from the true but exaggerated is to try an gauge how vague the terms she uses are. There has been plenty of amazingly interesting and legitimate research that has been done on the gut biome in recent years, and it's been done by actual scientists, who have spent years studying. Her PhD is a Holistic Nutrition PhD , which requires 5 online classes and a 7 page "dissertation". My advice is to ignore the entire first half of the book and do a web search for "microbiome" if you want more background on the health benefits of fermented foods. The actual recipes are good, and cover a wide variety of foods. There are some creative variations on foods I was already familiar with, as well as a selection of recipes unlike what I've cooked in the past. It's a good collection of recipes, and it's very handy to have them compiled together in one volume. There is no mention of teff in the book, which I found surprising, since it's an incredibly nutritious grain that is traditionally fermented, so you can't really call this a comprehensive collection of fermented foods, but it's a useful collection nonetheless.
