Description: The founder and editor of the world's most popular BBQ and grilling website, Amazing Ribs. Com, Meathead Goldwyn applies the latest research to backyard cooking and 118 thoroughly tested recipes. He explains why dry brining is better than wet brining; how marinades really work; why rubs shouldn't have salt in them; how heat and temperature differ; the importance of digital thermometers; why searing doesn't seal in juices; how salt penetrates but spices don't; when charcoal beats gas and when gas beats charcoal; how to calibrate and tune a grill or smoker; how to keep fish from sticking; cooking with logs; the strengths and weaknesses of the new pellet cookers; tricks for rotisserie cooking; why cooking whole animals is a bad idea, which grill grates are best;and why beer-can chicken is a waste of good beerand nowhere close to the bestway to cook a bird. Lavishly designed with hundreds of illustrations and full-colour photos by the author, this book contains all the sure-fire recipes for traditional American favourites and many more outside-the-box creations.

Review: I've eaten some of the greatest food on the planet and 2 dishes stand out. One was a steak cooked by one of the worlds top chefs at The Oberoi Hotel in Mauritius and the other was a rack of pork ribs cooked by some bikers at a BBQ rib shack in upstate New York. I have since then been on a quest to get even slightly close to those lovely ribs. I bought the rib shacks own book which helped. I bought a Pro-Q BBQ which helped, but Google was my best friend as Meathead (if you christen your son Meathead what do you expect he will do for a living?) writes many articles explaining the secret art of real BBQ, not the usual flipping burgers and burning chicken that we do in the UK, but the real long slow smoke pit type that produces the greatest food you'll ever eat! (Although grilling is covered too). Of course I had to buy the book, partly to pay Meathead back for all the free advice, and mostly to learn more! and here it is, delivered quickly by the usual Amazon effeciency. The only downside to this book is that it makes all my other BBQ books redundant, it covers everything from how to select a BBQ, cleaning it, types of wood, butchery, cooking on campfires, meat selection, recipies, rubs etc. EVERYTHING! And thanks to Meathead, I've so far (from the internet) produced a Beef brisket to rival the Oberoi steak, a rack of ribs to (almost) rival the biker pork ribs, and smoked chicken wings to rival anything! And I'm already looking forward to my next smoke pit session to try some of the amazing recipies and ideas in this book! Thankyou Meat!!!

Review: I came across this book after a decade of BBQ ing and judging for KCBS and given the good reviews I was curious to read it. Nice format, clearly written, good photos and helpful myth debunking. The first part of the book (~160 pages) is informative and useful. The second part is mostly a cookbook. If you’re a beginner this can be the first book you buy because has a lot of information and the myth debunking. A lot of information you must learn that will definitely help you to progress. If you decide to buy this book do not skip the first part; read it carefully and take the time to do so. Do not rush to the recipes. The recipes… well that is very subjective… being Neapolitan I turned up my nose for some of them (especially the Italian ones) and I still prefer Kirk’s versions. All in all if you haven’t a BBQ mentor and are willing to buy two books, buy this and Kirk’s one. Many cooking books are overpriced and this is not the exception. At least this has more information and not just recipes. I returned my copy, but 10 years ago I might have keep it.

Description: Read the HILARIOUS books that inspired the HOW TO TRAIN YOUR DRAGON films! Hiccup Horrendous Haddock the Third is a smallish Viking with a longish name. Hiccup's father is chief of the Hairy Hooligan tribe which means Hiccup is the Hope and the Heir to the Hairy Hooligan throne - but most of the time Hiccup feels like a very ordinary boy, finding it hard to be a Hero. Hiccup Haddock Horrendous the Third just wants a nice PEACEFUL birthday. But Hiccup's dad wants to steal the prized How to Train Your Dragon book, and prove that his Hooligans are just as good as the Bog Burglars - except Hiccup's dragon Toothless has EATEN it! So when Camicazi suggests stealing a copy from the grim Meathead Public Library, it seems like a good idea. BUT IT ISN'T! The library is guarded by the Horrible Hairy Scary the Librarian, four hundred Meathead Warrior Guards AND their Driller-Dragons. Will Hiccup survive - or is he DOOMED on his own birthday?ALSO INCLUDES A DRAGONESE DICTIONARY! How to Train Your Dragon is now a major Dream Works franchise starring Gerard Butler, Cate Blanchett and Jonah Hill and the TV series, Riders of Berk, can be seen on C Beebies and Cartoon Network.
