Description: Rajat Parr's profound knowledge of wines, deep relationships with the top producers around the world, and renowned tasting abilities have earned him the status in the business as a sort of wine oracle. Director of the wine program for the Mina Group, Parr presides over the lists at 17 of the country's top restaurants, the flagship of which, Michael Mina in San Francisco, holds the Wine Spectator's coveted Grand Award. In Secrets of the Sommeliers, Parr and wine journalist Jordan Mackay present a fascinating portrait of the world's top wine professionals and their trade. Parr and Mackay interviewed the elite of the sommelier community, and their colleagues' insights, recommendations, and entertaining (and envy-inducing) stories are woven throughout, along with Parr's own takes on his profession and the top producers and their wares. Along the way, the authors give an immersion course in tasting and serving wine like an expert; share strategies for securing hard-to-find bottles at a good price and identifying value sweetspots among the top regions; and teach readers how to make inspired food pairings. Photojournalist Ed Anderson's stunning work captures the gritty faces and storied places behind the world's best wines and the sommeliers who champion them.

Review: I attended a blind red wine tasting seminar at the LA Food & Wine Expo last summer and after the seminar met the authors of this book: Rajat Paar and Jordan McKay. Jordan's excitement about his upcoming restaurant and other adventures piqued my curiosity about the book. This is interesting because I have a friend who works in luxury advertising, representing Dom and Remy Martin, among others, and she did not incite my curiosity in this was (sorry - and very glad you are a friend!). So, I bought the book. The first several chapters are about Rajat and how he became interested in wine. If you are interested in food, you are interested in condiments and sauces, and you must be interested in wine. Wine is a condiment. I learned that one should be primary and one should be secondary. Am I having a wine party with some food? Or a food party with some wine? You must decide who is going to be the star of the show. Once you do that, then choosing a wine becomes much easier. About white wine... it is not my favorite. White wine does not meet my need for complexity, dark fruit, acidity, etc... in a wine. On the other hand, I don't necessarily want to serve a red wine with a delicate Halibut. Jordan and Rajat have taught me that there are more than 3,000 varietals of white wine out there! Statistically, I will find some that I like: to refuse white wine tasting is to rule out essentially half of the wine making universe. Worse, it rules out an EXPERIENCE of half of the wine making industry. I recommend this book. It will change the way you think about wine and the way you present wine in your home. Enjoy!
