Review: I've been experimenting with fermented foods from the garden for a couple of years now and wanted something more comprehensive than the online guides, which tend to be a bit vague or even contradictory. Originally, I bought the "Noma" fermentation book but that is way too complex: quite by accident, I found this one which manages to be full of interesting recipes and suggestions and is also very readable and encouraging. Within a day, I had a jar of jalapeno peppers fermenting on the kitchen windowsill. The book is bursting with recipes and ideas, beautifully photographed and written in a lovely, conversational style which allows enough leeway for you to know that fermenting food is not an exact science. Having said that, the reason for four stars and not five is that there is a whiff of pseudo-science to some of the assertions about health and diet - just a whiff: nothing even remotely approaching Paltrow-levels of quackery here! Highly recommended.
