Review: Historical background to the science and how it was misinterpreted. The further development of the understanding of how calories are measured and how calories are used in a human body - this was just BURNING calories. Then went on explain mechanisms how calories are metabolised from substrate (fat, carbohydrate, protein). Some anecdotes of upbringing and family recipes - put a more human face one what could have been a very technical book.
